Ingredients

Serves 4:
1 lb ground chicken
1 bunch Holy Basil (any basil would be fine)
1 red bell pepper
1 lime
5 minced garlic cloves
1 minced shallot
1 Thai chili pepper (I used half)

sauce -
1 tsp brown sugar
1-1/2 tbsp fish sauce
1 tbsp Sweet thick soy sauce

Directions:
Combine the brown sugar, fish sauce, and Sweet thick soy sauce into a bowl. Mix well and set aside. De-seed and thinly slice the red bell pepper and set aside. Take a wok (or sauté pan) and heat on high setting with some oil on the stove top. Once the oil is smoking hot, add the garlic and shallots and cook until it starts to brown and the aromas are strong (2-3 minutes). Then add the ground chicken and break it into small chunks. When it is half cooked add the sauce, stir it well before adding the chili pepper and sliced bell pepper. Mix it well for a couple minutes. Then add the Thai Basil, give it a quick toss, and serve with rice. Squeeze fresh lime juice over the chicken when serving and garnish with a Thai Basil leaf. Enjoy!
